Cucumber Salad with Feta & Mint

This easy and delicious salad features Persian cucumbers. Persian cucumbers are smaller than the standard variety (about 6″ long), with a smooth, edible skin (no peeling required!). They are tender and crunchy, with a delicate, mildly sweet flavor.

From the Market:
Persian cucumbers
Fresh mint
Red onion
Extra virgin olive oil

In your pantry:
Feta cheese
Salt and pepper

Persian cucumbers (6-8), sliced
1/4 red onion, thinly sliced or chopped
chopped fresh mint, to taste
1/4 lb. feta cheese, crumbled
extra virgin olive oil
2 T. fresh lemon juice
salt and freshly ground pepper to taste

Combine cucumbers, red onion, mint and feta in a serving bowl. Whisk oil and lemon juice together till emulsified. Season with salt and pepper. Dress salad, adjusting seasonings to taste, and serve.
